The payouts on "full coverage" aren't very high, either. At most you'll get the blue book retail, and more likely the blue book trade-in value. Once damages exceed that dollar amount, the bike is totalled and the insurance company takes it. Same thing is likely to happen if some else is at fault and hits your bike. Their liability insurance will limit out at the blue book for your bike.
By the way, your liability insurance typically has three numbers, such as 100/300/10. The first is the liability to one person; the second the total liability the insurance company will pay; the third the property damage liability. With the prices and repair costs of today's cars, how much do you think it might cost if you run into the front of a Lexus, causing its air bag to deploy, damaging the body work, the air conditioner, the cooling system, and maybe the engine?
