Most of the people who do "performance" drawing or painting practice first- a lot. Remember that guy who would paint a huge picture of John Lennon in about 10 minutes? He did the same painting for many months at home before he ever did it in front of the public.

That would be my guess haha. But that is pretty dang amazing. I saw one a while back that painted with ketchup, mustard, bbq sauce, etc. It was cool too.
