I don't do the jerky thing, but babyhog can help you with that. Plus lots of stuff online.

I just combine a mixture of 50% soy sauce and 50% terriaki sauce. You can add pepper if you like. I let it marinate around 24 hrs. Simple and turns out great.

Hi Arteacher
I make jerkey all the time. You'll be hard pressed to beat the comerical mixes. You can find them from the sites that sell dehydrators.
Use ground meat instead of sliced . It comes out like the strips (1 inch x 1/8 inch) just like the store sells. Use a cake decorator wide tip , looks like a grease gun.
The "Jerkey Cure" mix is nothing but Salt. (Table spoon/lb of meat)
I like to add equal amount of brown sugar too.
The spice mix can be anything you want. That ground beef rub or steak seasoning from the grocery works GREAT
Doin't forget a little bit of curry powder or red pepper.
Just work it all together like mashed taters and shoot it onto the drying rack.
Let us know how it comes out .
